In the extract they use diegetic sound which in this scene is the siren noise to add intensity, theres also music playing from the cafe and Civis talking to make it seem realistic by mirroring the sounds of the real world. This helps make the TV show feel likes its part of the real world and makes it realistic so people can get the feel of what it is like to be a police officer.
Also theres music playing when the men are robbing the store but when it cuts back to the police officers eating it shows how much tension in both scenes. In the robbing scene the music shows a lot of tension where as the scene with the police in the cafe has only music playing from the cafe which is quiet which shows very low tension but when they get a call in on the radio some intense music plays to show the tension rising.
